Summer absolutely cannot happen without popsicles, for that we should all blame 11 year old Frank Epperson’s inability to tidy up after himself. So thank you Frank!

 

Here’s the recipe to one of my healthy versions of the ice pop I like to snack on once in a while. This purple version was actually invented today as a treat for my friends, who are visiting.

 

This will make 6 ice pops, these ones made in my favorite popsicle molds, available on Amazon: Groovy Freezer Popsicle Molds. It will take 3 minutes to make, so don’t even try to play the tired card:

 

– 1 cup frozen blueberries

– ½ cup UNSWEETENED almond milk

– 1 tbsp of RAW honey

 

As I mentioned a few times before, it is essential to use RAW honey, not the highly processed variety, which lacks pollen and all the beneficial vitamins, so look out for the raw version in the grocery stores.

 

Blend all these ingredients together, fill your popsicle molds- really fill, then keep them in the freezer for a couple of hours and voila, you’re popped, not pooped at all, but popped!

 

If you’re having trouble getting your popsicles out of the molds (which I always do), try giving the main plastic part a quick run under the cold water and then apply a gentle pressure to take your ice lollies out.
