I call these my summit bombs, as they are full of explosive energy and plentiful in good fats and sugars. Their main ingredient, bee pollen, is truly special, it will carry you too at least two summits at a time.
Bee pollen is a marathoner’s genuine ally, we take it for endurance. It contains vitamins and minerals aplenty, it also has all the essential amino acids. People who eat it regularly, seem to live longer, healthier lives.
I make these before every hike we do, and they must be pretty tasty as we’ve had squirrels comfortably munching on these, sitting next to us while watching the sun go down over the Grand Canyon.
Ingredients (all organic if possible), this will make about 20:
dry ingredients:
- 1 cup of oats
- 1 cup of walnuts
- 1/2 cup of pumpkin seeds
- 1 tsp bee pollen
- A pinch of good quality sea salt
wet ingredients:
- 1.5cup of pitted Medjool dates
- 100g unsweetened apple sauce
- 5 tbsp melted coconut oil
Blend all your “dry ingredients” first to make a powdery consistency and then add all the ‘wet ingredients’. Blend well. Now, let’s roll some balls. It’s good to wash your hands between every couple of balls, as they’re much easier to make when your hands are clean and dry. Refrigerate for a couple of hours and pack your rucksack, the summit is waiting.
