Summer Pudding

This is currently my favorite breakfast.

 

It’s super healthy and comes out very cold, so it won’t make you sweat like porridge would do in these 95F, 35C heats.

 

As you know I’m a big fan of chia seeds. These ‘superseeds’ burst in protein, omega 3 fatty acids and minerals, which keep me going during the trainings for my next marathon.

This is very easy-to-make dish; all you need to do is mixing it all together and then placing in the fridge for at least 6 hours, or overnight. The chia seeds will expand and will make for a super tasty pudding. Top it up with some fruit in season- either cherries, peaches, blackcurrants, blueberries, apricots, raspberries or in my case strawberries and sprinkle some more chia seeds or pre-soaked almonds on top…

 

Summer Pudding:

Serves 1:

1 cup coconut milk (homemade’s best, or the canned version in the grocery stores will do)

3-4 tbsp chia seeds

1 tbsp of raw honey (raw is preferable as it still contains all the beneficial nutrients)

½ tsp vanilla extract

 

On top:

-handful of strawberries
